i eat gluten free: homemade sorbet


I don't know about where you live, but here in Nashville it feels like summer! I was craving a frozen treat, but wanted something all natural and with no sugar. I came across this recipe from Clean Eating magazine and not only is it easy and quick, it's delicious!

Mango Sorbet

3 cups of frozen fruit (I chose all Mango, but you can experiment and do anything!)
1/2 cup of coconut water or until creamy
juice of 1 lime

Put frozen fruit (I get the bags of it in the freezer section) into a food processor and pulse until it's in tiny granules

Mix the lime and coconut water together and then pour into the feed tube while the fruit is processing until it gets creamy. You may have to scrape down the bowl a few times.

Serve immediately, or put in an airtight container and freeze.

How easy is that?
